It’s the end of summer, which means that almost all of the fruit and vegetables in the OFE gardens have been harvested. It also means that the canned goods made from all that fresh produce are ready and available. The OFE gardeners spend many volunteer hours harvesting and preparing these delicious foods, and all of the profits from this operation go to pay for the expenses related to the garden program.
This year, the gardeners have made 20 varieties of jams, sauces and pickles to choose from. There are eight different varieties of fig jams and two types of grape jelly. On the savory side, there is tomato salsa (mild, medium and hot), eggplant salsa, hot mustard, tangy pickle relish and salsa verde. There are pickled items too: sweet and dill cucumber pickles, pickled green beans and okra. Also available is an excellent marinara sauce made with the abundance of garden grown tomatoes that came in great batches in June but were then overwhelmed by the heat.
These canned goods are only made in the summer, since all of the produce in the garden goes home with the students during the year.
